Embracing Summer’s Bounty with a Delicious Crustless Vegetable Quiche
Summer is a fleeting season, isn’t it? One moment you’re eagerly awaiting its arrival, and the next, it feels like it’s slipping away too quickly. Here, summer is in full swing, bringing with it a vibrant array of activities, cherished family moments, and the unmatched joy of fresh, homegrown produce. This time of year truly embodies the spirit of relaxation and connection, making every moment precious.
Summer Escapes and Family Traditions
Our weeks are often filled with exciting adventures. Recently, we spent quality time with my sister in Alabama, where the kids revelled in endless play, late nights, and creating unforgettable memories. Mornings began with refreshing dips in the pool, and afternoons held delightful surprises, like my sister’s impromptu s’mores pizza – a dessert invention that promised pure fun and indulgence. The anticipation of something new and delicious is always part of the summer magic.
The excitement continues with an upcoming beach trip, a cherished annual tradition. It’s a grand family gathering, including my sister’s family, my in-laws, my sister-in-law’s family, and my parents. Imagine the delightful chaos! We share hearty laughs, divide meal preparation duties, embark on nightly crab hunts, and simply bask in the glorious sunshine. These moments of shared joy and simple pleasures make it my absolute favorite part of every summer.
From Garden to Table: The Joys of Homegrown Vegetables
Beyond family vacations, my garden holds a special place in my summer heart. It took a few seasons to truly master the art of growing things without, well, accidentally killing them all. Gardening didn’t come naturally to me; initially, I’d plant far too many varieties and feel overwhelmed. Over time, I’ve learned what thrives under my care and what doesn’t, allowing me to cultivate a more successful and manageable harvest. Plus, my children have grown into enthusiastic helpers, especially when it comes to watering, turning garden chores into bonding activities.
Our backyard is transformed into a vibrant oasis with countless flowers of all kinds. Tucked away in one corner, I maintain a dedicated vegetable and herb garden. This year’s harvest promises to be exceptional, featuring prolific zucchini, squash, four distinct varieties of tomatoes, aromatic basil, and fragrant cilantro. My tomato plants are particularly magnificent this season – truly colossal! I’ve been documenting their impressive growth on my Instastories; they are literally taller than me, which is no small feat. I left home with an abundance of green and orange tomatoes ripening on the vines, and I’m incredibly eager to see their progress upon our return.
It’s this wonderful garden bounty that inspires many of our summer meals. Today’s feature, the Crustless Summer Vegetable Quiche, proudly showcases some of these homegrown treasures. It’s a beautifully light and flavorful dish, offering the perfect start to any day, whether it’s a bustling weekday morning or a leisurely weekend brunch. The fresh ingredients elevate this healthy breakfast recipe, making it a staple for anyone looking to enjoy the best of the season.
The Perfect Healthy and Simple Breakfast: Crustless Quiche
This Crustless Summer Vegetable Quiche embodies everything we love about healthy eating: it’s dairy-free, gluten-free, and contains no added sugar or artificial ingredients. The beauty of this recipe lies in its simplicity; you won’t find a long list of complicated steps or obscure ingredients. Instead, it celebrates the vibrant, straightforward flavors of summer vegetables, creating a dish that’s both nourishing and incredibly satisfying. While designed to be dairy-free, for those who enjoy cheese, a sprinkle of feta or goat cheese would complement the flavors wonderfully.
Beyond its health benefits and ease of preparation, this quiche is undeniably pretty. Its colorful medley of vegetables makes it an attractive and elegant addition to any brunch spread, especially when you’re hosting guests. It’s a dish that looks as good as it tastes, proving that healthy eating can also be visually appealing.
The final product is remarkably soft and fluffy, defying expectations for a dairy-free dish. The secret lies in a simple splash of water, which works wonders every single time. This trick isn’t limited to quiches; I also use a bit of water in my scrambled eggs and omelets, eliminating the need for milk entirely while achieving a wonderfully light texture.
One of the best aspects of this easy quiche recipe is its incredible versatility. While zucchini, tomatoes, and basil are featured here, many other vegetables complement the egg base beautifully. Consider incorporating artichoke hearts, fresh spinach, tender squash, or peppery arugula for a delightful twist. Feel empowered to experiment with your favorite garden-fresh produce or whatever seasonal vegetables you have on hand. The key is to embrace the bounty of summer and tailor the quiche to your personal taste. This makes it an ideal canvas for creativity in the kitchen, ensuring you’ll never tire of this breakfast staple.
For a complete and satisfying meal, serve slices of this delicious quiche alongside my Skillet Breakfast Potatoes or a vibrant bowl of fresh seasonal fruit. It’s a combination that’s both hearty and light, perfect for any morning.

Ingredients
2x
3x
- 1 tbsp olive oil
- 9 eggs
- 1/2 cup water
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1 small zucchini
- Handful grape or cherry tomatoes
- Handful fresh basil
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Generously spread olive oil around the bottom and sides of a pie dish to prevent the quiche from sticking. Use your fingers or a paper towel to ensure an even coating.
- In a mixing bowl, combine the eggs, water, salt, pepper, and garlic powder. Whisk thoroughly until all ingredients are well combined and the mixture is light and airy.
- Carefully pour the whisked egg mixture into your prepared, greased pie dish.
- Prepare the zucchini: remove the stem and peel off the dark green skin, discarding it. Using a vegetable peeler, create delicate zucchini ribbons. Stop peeling when you reach the seedy middle portion of the zucchini, as it tends to be too soft for perfect ribbons.
- Gently place the zucchini ribbons into the egg mixture. For an appealing presentation, try rolling some of the ribbons into small spirals before adding them. While they may not all retain their shape perfectly, many will, adding texture and visual interest to the quiche rather than simply lying flat.
- Slice your grape tomatoes in half. If you’re using larger cherry tomatoes, you might want to cut them into thirds. Give your fresh basil a good chop; I personally prefer leaving mine in slightly larger pieces to appreciate its vibrant flavor and aroma.
- Evenly distribute the chopped tomatoes and basil into the egg mixture in the pie dish.
- Bake in the preheated oven for 30 minutes, or until the quiche is set and lightly golden. Allow the quiche to cool slightly before slicing and serving. This allows the flavors to meld and the quiche to firm up, making it easier to serve.
