Key Ingredients for Perfectly Crispy Almond Chicken Cutlets
Crafting these delectable chicken cutlets requires a few simple yet essential ingredients. Here’s what you’ll need, along with insights into why each component plays a crucial role in achieving the perfect flavor and texture:
- Chicken Breasts: Opt for boneless, skinless chicken breasts. Their lean meat and mild flavor make them an ideal canvas for our almond flour breading. When sliced and pounded thin, they cook quickly and evenly, ensuring tender results.
- Almond Flour: The star of our breading! Fine-ground, blanched almond flour provides a light, crisp coating that browns beautifully without the heavy carb load of traditional wheat flour. It’s naturally gluten-free and adds a subtle nutty flavor.
- Olive Oil: Essential for shallow frying. A good quality olive oil adds flavor and helps create that irresistible golden crust. You can also use avocado oil or another high-smoke-point cooking fat you prefer for shallow frying.
- Coconut Aminos (or Soy Sauce): This is our secret weapon for an umami-rich egg wash. Coconut aminos offer a savory, slightly sweet flavor similar to soy sauce but with significantly less sodium and a milder profile. It’s a fantastic soy-free and gluten-free alternative that elevates the overall taste. If you’re not sensitive to soy or gluten, regular low-sodium soy sauce can be used.
- Eggs: The binding agent! Eggs are crucial for helping the almond flour adhere to the chicken, creating a consistent and crispy coating.
- Seasonings: A thoughtful blend of salt, chili powder, garlic powder, dried parsley, and dried basil creates a vibrant flavor profile that complements the chicken beautifully. These herbs and spices infuse every bite with warmth and depth, transforming simple chicken into something truly special.
Why Coconut Aminos? A Healthier Flavor Booster
For those unfamiliar, coconut aminos are a truly wonderful ingredient. Derived from the sap of coconut trees, it’s fermented and then blended with sea salt. The result is a dark, savory liquid that tastes remarkably similar to soy sauce, but with several advantages: it’s soy-free, gluten-free, and significantly lower in sodium. This makes it an excellent choice for anyone looking to reduce their sodium intake or avoid soy allergens. My go-to brand is often Coconut Secret, but many other excellent organic brands are available, all committed to keeping ingredients simple and natural. Whisking coconut aminos into the egg mixture adds an incredible depth of flavor that penetrates the chicken, ensuring a delicious experience in every bite.
Step-by-Step Guide: Crafting Your Crispy Almond Chicken Cutlets
Follow these detailed instructions to achieve perfectly cooked, crispy, and flavorful almond flour chicken cutlets every time:
1. Prepare Your Breading and Egg Wash
- Set Up Your Breading Station: In a shallow bowl or plate, combine the almond flour, salt, chili powder, garlic powder, dried parsley, and dried basil. Use a fork or whisk to thoroughly mix these ingredients, ensuring the spices are evenly distributed throughout the flour. This seasoned breading is what gives our cutlets their incredible flavor.
- Create the Egg Mixture: In a separate shallow bowl, crack your eggs. Add the coconut aminos (or soy sauce) and whisk vigorously until the eggs are well combined and slightly frothy. This egg wash acts as the perfect adhesive for the almond flour.
2. Prepare the Chicken Cutlets
- Slice the Chicken: Take each boneless, skinless chicken breast and carefully slice it horizontally. This technique yields two thinner cutlets from each breast, meaning two chicken breasts will give you four cutlets in total. Thinner cutlets cook faster and more evenly, and they are easier to bread.
- Pound the Chicken: Place each sliced chicken cutlet between two sheets of plastic wrap or in a large ziplock bag. Using a meat pounder (or the flat side of a heavy skillet, or even a rolling pin), gently but firmly pound the chicken until it reaches an even thickness of about 1/4 inch. This step is crucial for tender chicken and consistent cooking. It also helps tenderize the meat, ensuring a more succulent bite.
3. Master the Breading Technique
Breading with almond flour can be slightly different from traditional flour, but with the right technique, you’ll achieve a superior crust. The key is preventing the breading from becoming clumpy and ensuring even coverage.
- Egg Wash First: Dip each flattened chicken cutlet into the whisked egg mixture, ensuring both sides are fully coated. Lift the cutlet and allow any excess egg wash to drip off. This is a critical step; too much egg will make the breading soggy and clumpy.
- Almond Flour Application: Instead of dipping and flipping, lay the egg-washed cutlet directly onto the seasoned almond flour mixture. Use your fingers or a spoon to generously scoop the breading over the top of the cutlet. Gently press the almond flour into the chicken, ensuring it adheres well. While you’re pressing the top, the bottom of the cutlet will also pick up a good coating. This method helps create a uniform, crisp crust and prevents the flour from clumping.
- Repeat: Continue this process for all cutlets. You might notice that as you bread more chicken, the almond flour mixture can become slightly damp. If this happens, simply use your fingers to break up any small clumps and continue pressing the flour onto the chicken. Don’t be afraid to add a little extra almond flour to your bowl if needed, especially if your chicken breasts were particularly large.
4. Pan-Frying for Golden Perfection
- Heat the Skillet: Place a medium to large skillet (cast iron works wonderfully for even heat distribution and beautiful browning) on your stove over medium heat. Add the olive oil (or your preferred cooking fat). You’ll know the oil is hot enough when it shimmers slightly and a tiny drop of water sizzles instantly.
- Cook the Cutlets: Gently place the breaded chicken cutlets into the hot skillet. Avoid overcrowding the pan; I typically cook two cutlets at a time to ensure they brown evenly and maintain their crispiness. You should immediately hear a satisfying sizzle.
- Even Browning: Cook for approximately 3 minutes on each side. The exact time may vary slightly depending on the thickness of your cutlets and your stove’s heat. Look for a beautiful golden-brown crust on both sides. The internal temperature of the chicken should reach 165°F (74°C) to ensure it’s fully cooked.
- Resting: As each batch finishes cooking, transfer the crispy cutlets to a plate lined with paper towels. This helps drain any excess oil, keeping them extra crispy. If needed, add a little more oil to the skillet before cooking the remaining cutlets.

Choosing the Best Almond Flour for Your Breading
Not all almond flour is created equal, and selecting the right type can significantly impact the success of your crispy chicken cutlets. For this recipe, and most baking or breading applications, I highly recommend using **blanched, super-fine almond flour**.
- Blanched vs. Unblanched: Blanched almond flour is made from almonds that have had their skins removed before being ground. This results in a lighter color and a finer, more consistent texture. Unblanched almond flour, on the other hand, retains the almond skins, giving it a slightly coarser texture and a flecked appearance. For a smooth, even, and beautifully golden crust, blanched is the way to go.
- Fine vs. Meal: Look for “super-fine” or “finely ground” almond flour. Almond “meal” is typically coarser and can result in a less uniform and potentially grainy coating. Fine almond flour adheres better and creates a crispier, more delicate crust.
- Recommended Brands: Two of my personal favorites that consistently deliver excellent results are Bob’s Red Mill Super-Fine Almond Flour and Nature’s Eats Almond Flour. Both are widely available and reliable choices.
- Storage: Almond flour can go rancid due to its high oil content. Always store it in an airtight container in the refrigerator or freezer to extend its shelf life and maintain freshness.
Using the correct type of almond flour is truly the secret to a professional-looking and tasting breaded chicken cutlet that rivals its traditional counterparts.

Serving Suggestions: What to Pair with Your Crispy Chicken Cutlets
These versatile almond flour chicken cutlets can be the star of many different meals. Here are some of my favorite ways to serve them, transforming a simple dinner into a memorable feast:
- Classic Sides: Pair with healthy and vibrant vegetable dishes. My Herb Roasted Brussels Sprouts and Broccoli offer a delightful earthy counterpoint, while Roasted Red Cabbage adds a pop of color and unique flavor. For a quick and easy option, Garlic Green Beans are always a hit.
- Fresh Salads: Slice the cooked cutlets and serve them atop a fresh, crisp salad. A vibrant mixed green salad with a light vinaigrette, cherry tomatoes, cucumbers, and perhaps some avocado makes for a refreshing and complete meal. The warm, crispy chicken against cool greens is a fantastic contrast.
- Wholesome Sandwiches: Turn your cutlets into an epic sandwich! Place a warm, crispy cutlet on a gluten-free bun or between large lettuce leaves (for a low-carb option). Add your favorite toppings like sliced tomato, lettuce, a smear of homemade mayo, or a tangy mustard. It’s a hearty and satisfying lunch or dinner.
- Family-Friendly Tenders: If you have little ones, or simply prefer a different format, you can easily slice the chicken breasts into tenders before breading. These “almond chicken tenders” are perfect for dipping and a fun, easy-to-eat option. They can even be served with a healthy dipping sauce.
- Meal Prep Powerhouse: Cook a larger batch of these cutlets at the beginning of the week. They store well in the refrigerator and can be reheated (preferably in an air fryer or oven to maintain crispness) for quick lunches or dinners. Pair them with prepped veggies or a simple side salad throughout the week.

Ingredients
- 2 chicken breasts, boneless and skinless
- 1/4 cup olive oil, can use another cooking fat of choice if you’re comfortable doing a shallow fry with it
Egg Mixture
- 2 eggs
- 2 tbsp coconut aminos or soy sauce
Breading
- 1 cup almond flour, finely ground, if your chicken seems large you may want to use 1 1/4 cup
- 1/2 tsp salt
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- 1/2 tsp dried basil
Instructions
-
Add your almond flour, salt, chili powder, garlic powder, parsley, and basil to a shallow bowl. Stir to combine.
-
Crack eggs in a separate bowl. Pour in the Coconut Aminos. Whisk until well combined.
-
Cut chicken breasts horizontally. This will create four thin cutlets.
-
Cover each cutlet with plastic wrap. Use a meat pounder or rolling pin to flatten each cutlet until it’s about 1/4 inch thick.
-
Dredge each cutlet in the egg mixture, let the excess drip off, and then place the cutlet in the breading mixture. Use your fingers to cover the top of the cutlet with breading. Press it into the chicken. Breading will stick to the bottom of the cutlet while you do this. (I’ve found that breading your chicken this way helps to prevent the almond flour from getting too clumpy.)
-
Place a medium skillet (I use my cast iron) on the stove. Heat to medium heat. Add the olive oil (or another oil if you prefer). Once oil is hot you’re ready to add the chicken.
-
Gently place the breaded cutlets into the skillet. I usually do two cutlets at a time. You should hear that oil sizzle right away. Cook for approximately 3 minutes on each side. The chicken should be cooked through before removing from the pan.
-
Place your cooked cutlets on a paper towel lined plate while you cook the remaining two cutlets (assuming you do two at a time like I do). If you need to add more oil to the skillet you can.
Notes
You can of course slice your chicken into tenders before breading if you’d prefer chicken tenders instead of cutlets.
If you find you don’t have quite enough almond flour, just stir a little extra into the breading mixture. I can make the 1 cup of almond flour work but I do really have to scrape up every bit of it. If your chicken is rather large you may want a bit more.

Tips for Success: Achieving the Perfect Crispy Crust
While the recipe is straightforward, a few key tips can elevate your almond flour chicken cutlets from good to absolutely fantastic, ensuring that desired crispy, golden crust every time:
- Even Thickness is Key: Pounding your chicken to an even 1/4-inch thickness is paramount. This ensures uniform cooking, so one part isn’t overcooked while another is still raw. It also helps the cutlets stay flat in the pan, maximizing surface contact for browning.
- Drain Excess Egg Wash: Before dredging the chicken in the almond flour, let any excess egg wash drip off thoroughly. This prevents the breading from becoming soggy or clumpy, which can lead to a less crispy result. A quick shake over the bowl is usually sufficient.
- Press the Breading Firmly: Almond flour has a different texture than wheat flour. Instead of just rolling or lightly coating, actively press the almond flour mixture onto both sides of the chicken cutlet. Use your fingers to ensure a thick, even layer. This firm application helps the breading adhere better and creates a more substantial crust.
- Don’t Overcrowd the Pan: Frying too many cutlets at once will lower the oil temperature, leading to steaming instead of frying. This results in a softer, less crispy coating. Cook in batches, usually two at a time, to maintain consistent oil temperature and achieve optimal crispiness.
- Monitor Oil Temperature: Medium heat is generally ideal. If the oil is too hot, the breading will burn before the chicken cooks through. If it’s not hot enough, the chicken will absorb too much oil and become greasy. Look for a gentle sizzle when the chicken hits the pan.
- Flip Once: For the crispiest crust, try to flip the cutlets only once. Let one side cook undisturbed until beautifully golden brown before flipping to cook the second side. Constant flipping can disrupt the breading and prevent a deep crust from forming.
- Use a Good Skillet: A heavy-bottomed skillet, such as cast iron, distributes heat more evenly and retains it better, contributing to a superior crust.
Storage, Reheating, and Make-Ahead Options
These almond flour chicken cutlets are best enjoyed fresh, but they also make fantastic leftovers and can be prepared in advance:
- Storage: Allow cooked and cooled chicken cutlets to reach room temperature before storing them in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze them in a single layer on a baking sheet, then transfer to a freezer-safe bag or container for up to 2-3 months.
- Reheating: To restore their crispiness, avoid the microwave! Reheat chicken cutlets in an air fryer at 350°F (175°C) for 5-7 minutes, or in an oven at 375°F (190°C) for 10-15 minutes, flipping halfway. This method ensures they become delightfully crispy again.
- Make-Ahead: You can prepare the chicken cutlets up to the breading stage. After breading, place them in a single layer on a parchment-lined baking sheet and refrigerate for up to 1-2 hours before cooking. This can help the breading set even better. For longer make-ahead, you could par-cook them slightly or freeze them breaded (but uncooked), then fry from frozen or thawed.
Frequently Asked Questions About Almond Flour Chicken Cutlets
Q: Can I bake these chicken cutlets instead of pan-frying?
A: Yes! While pan-frying yields the crispiest results, you can certainly bake them for a lighter option. Preheat your oven to 400°F (200°C). Place the breaded cutlets on a lightly oiled baking sheet and bake for 15-20 minutes, flipping halfway, until golden brown and cooked through (internal temperature 165°F / 74°C). Baking might result in a slightly less crisp crust compared to pan-frying but is still delicious.
Q: Is this recipe suitable for a Keto diet?
A: Absolutely! Almond flour is a fantastic low-carb, keto-friendly alternative to traditional wheat flour. Combined with boneless, skinless chicken breasts, olive oil, and eggs, this recipe fits perfectly into a ketogenic lifestyle. Always check your specific brands of coconut aminos for carb content, though it’s typically very low.
Q: What if I don’t have coconut aminos?
A: You can substitute coconut aminos with an equal amount of low-sodium soy sauce if you don’t have dietary restrictions regarding soy or gluten. The flavor profile will be slightly different but still delicious.
Q: How can I prevent the almond flour breading from falling off?
A: The key is to ensure the chicken is properly coated in egg wash (with excess drained off) and then to firmly press the almond flour onto the chicken. Don’t just dredge and shake; actively press the flour into the surface. Pounding the chicken to an even thickness also helps create a good surface for the breading to adhere to.
Q: Can I use different seasonings?
A: Definitely! Feel free to customize the seasoning blend to your preference. Italian seasoning, smoked paprika, onion powder, or a touch of cayenne pepper for heat would all be excellent additions or substitutions. Experiment to find your favorite flavor combination!
