Healthy Pumpkin Oat Muffins are an easy breakfast, dessert, or snack the whole family will enjoy! No all purpose flour. And they’re sweetened with honey or maple syrup!

Ingredients

  • 1 cup canned pumpkin puree
  • 2 cups quick-cooking rolled oats or old-fashioned rolled oats (see notes for differences)
  • 2 eggs
  • ⅓ cup honey or pure maple syrup
  • 1 cup milk (1% milk or unsweetened almond milk recommended)
  • 1½ teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¾ cup chocolate chips (dark, milk, or semi-sweet)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Add all ingredients except the chocolate chips into a blender. Blend until the batter is completely smooth and the oats are finely ground. (The batter should no longer resemble oats at this stage.)
  3. Carefully fold the chocolate chips into the batter (do not blend them).
  4. Add muffin/cupcake liners to your muffin tin and lightly coat them with olive oil or your favorite non-stick spray to prevent sticking.
  5. Fill your muffin cups approximately ⅔ full (or slightly more) with batter. For an extra touch, press a few additional chocolate chips onto the top of each muffin before baking.
  6. Place in the preheated oven and bake for 18 to 20 minutes. A toothpick inserted into the center of a muffin should come out mostly clean.
  7. Remove the pan from the oven and set aside to cool for 5 minutes before transferring muffins to a wire rack to cool completely.

Notes

You have two choices in oats here: Old-fashioned rolled oats will be lighter but give you muffins that have more of an “oaty” texture and flavor. Quick-cooking rolled oats will blend better but yield a more dense muffin. I prefer the quick oats but it’s really a matter of personal preference. Use whichever you like!

These muffins freeze exceptionally well. If you end up with more than you need, feel free to freeze the extras for later enjoyment!

When selecting canned pumpkin, ensure it contains only one ingredient: pumpkin. Libby’s is a widely available brand, but any pure pumpkin puree will work perfectly.
