Ingredients

  • 2 cups sweet potatoes, diced into 1 inch cubes
  • 12 oz fresh broccoli
  • 1 red bell pepper, sliced into strips
  • 1 cup sliced mushrooms
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes
  • 2 tbsp cooking fat of choice, I use extra virgin olive oil or avocado oil.
  • 4 eggs

Optional: fresh herbs for garnish

Instructions

  1. Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Spread diced sweet potato, broccoli florets, red pepper strips, and mushroom slices in a single layer on a parchment paper lined baking sheet. (A 12×17 inch sheet pan works best for this recipe.)
  3. Drizzle your cooking fat of choice (olive oil or avocado oil recommended) evenly over all the vegetables. Sprinkle with salt, pepper, chili powder, garlic powder, and crushed red pepper flakes. Toss gently to ensure all vegetables are coated.
  4. Place the baking sheet in the preheated oven and bake for 15 minutes.
  5. Remove the pan from the oven. Using a spatula, create four small clear spaces among the roasted vegetables for your eggs. Carefully crack one egg into each of these spaces. Sprinkle a pinch of salt over the eggs.
